I just tried it, and it does indeed make the game run at 1280x800 on the Deck and removes black borders around the game screen.

Quick question on the Zoo Tycoon - PCGW says you can change the resolution in the zoo.ini file within the game config location - have you tried to set that to 1280x800 to see what happens?

It's a neat read to see you can get old windows games running if you want to jump through a bunch of hoops and rip old cd-roms etc. but from a practical standpoint I, and I can only assume many, many others, would be FAR more interested in seeing this same effort put into older games we can buy on Steam. Knowing how the zoo game we all played for free on a shareware disc from Walmart in 1997 runs on the Steam Deck is a cool experiment but knowing which classic titles readily available on Steam (even if it takes a launch code or specific proton layer) run at a locked 90 etc. and really showcase what this little guy can do to older titles would be incredible.
